Dalgona coffee, also known as whipped coffee, is a beverage made from instant coffee granules, sugar, and hot water beaten together to create a thick foam, which is then layered over milk.
What Makes Dalgona Coffee Foam?
The foam in Dalgona coffee is created through the dispersion of gas into a liquid. Here’s a breakdown:
• Surfactants Roasting coffee beans produces melanoidins, foaming agents also responsible for crema in espresso and bubbles in cappuccino. Melanoidins act as surfactants, helping to hold the air bubbles that form when whipping the coffee mixture.
• Viscosity The viscosity of the mixture of coffee, sugar, and water is also key to Dalgona coffee’s foam. Sugar increases the viscosity of the liquid phase, which slows drainage and helps the foam maintain its shape.
Dalgona Coffee Recipe
Ingredients:
• 1/4 cup instant coffee powder
• 1/4 cup sugar
• 3 tablespoons hot water
• Ice cubes
• 2 cups chilled milk
Instructions:
1. In a large bowl, combine instant coffee powder, sugar, and hot water.
2. Mix well until everything is combined.
3. Use a beater or whisk to beat on low speed.
4. Beat in one direction to incorporate air.
5. Continue to beat until the mixture lightens and thickens, about 7-8 minutes. The mixture should turn creamy with a smooth, silky texture.
6. In a large glass, add ice cubes.
7. Pour in 1 cup of chilled milk, filling ¾ of the mug.
8. Slowly drop in 2 tablespoons of the prepared Dalgona mixture.
9. Spread uniformly so that it covers the entire glass.
10. Sprinkle with coffee powder and serve.
Dalgona Coffee Variations
• Boozy Whipped Coffee: Add a shot (or two) of Kahlua, Irish cream, or Rumchata to the glass of milk. Or, top a white Russian with whipped coffee.
• Dirty Whipped Chai: Add chai tea concentrate to milk for a Dalgona-style dirty chai.
• Black Forest Whipped Coffee: Serve the whipped coffee over chocolate milk mixed with cherry syrup, or spoon over hot chocolate with cherry syrup.
• Chocolate-Hazelnut Whipped Coffee: Swirl a few tablespoons of Nutella into the whipped coffee before spooning it over milk. Add hazelnut syrup to the milk if desired.
• Pumpkin Spice Whipped Coffee: Add a pinch of cinnamon, ginger, nutmeg, and cloves to the Dalgona coffee whip recipe. Mix 2 to 3 tablespoons of pumpkin puree into 1/4 cup of steamed milk until dissolved. Serve warm or over ice and garnish with cinnamon.
• Butterbeer Whipped Coffee: Substitute brown sugar for granulated sugar and whip until fluffy. Add caramel syrup and toffee syrup to hot or cold milk over ice. Top with the customized coffee whip and drizzle with caramel and butterscotch.
• Matcha Whipped Coffee: Use your favorite brand of matcha powder to make a whipped tea version.
