My first interaction with this king (or queen) of the Goan street food world was 25 years ago when I was staying in Panaji for studies. Life in hostels is always topsy-turvy. Our pockets used to be full of cash on Mondays when we would come from our homes. So the week used to start with royal dinners at the Circuit House on Altinho. By midweek, the pinch in the pockets would start to nag us, so we used to depend on anyone with a bike to get parcels of fried rice, etc from the town below (our hostel was on Altinho). Parikshit Nadkarni used to be our usual Man Friday here. By the end of the week, our palate had to be content with Ros Aamlet and sometimes even Chikki!!! But then that's the fun of hostel life!!!
Nowadays this dish (if I can call it so) is available in every nook and corner of the state. Some ros aamlet gaade (roadside stalls) have become so legendary, that their names are whispered in awe in food circles....like Ulhas in Margao and Sandeep in Panaji. And personally, I am of the opinion that Margao wins the title by a large margin!!!
I prefer the one we get at Kalika Restaurant (the one in the pic), opp. Multipurpose School in Borda. Just the right amount of spice and taste that appeals to me. And that small piece of chicken hidden somewhere, each and every time!!!
